My goodness, what a busy week! I haven’t posted hardly anything at all because it’s been so hectic around here. I haven’t been feeling great for one; I’ve also been traveling all over the state (visiting friends in the hospital, doing the tourism thing because I have family in town, etc) so needless to say, I got pretty off task.
One helpful side effect of all of this is that I have three leftover meals from last week I didn’t get to – so my grocery trip for the week was under $30.00! It’s the little things in life…
Here is this week’s Menu Plan Monday post.
Breakfasts:
- Me and Hubbo: Breakfast Burritos, Cereal, Pancakes
- Hosanna: Eggs, Veggie Sausage, Pancakes
Lunches:
- Me: Turkey Sandwiches, Soups, Grilled Cheese, Leftovers
- Hubbo: Frozen meals
- Hosanna: Turkey, Peanut Butter, Leftovers
Snacks: Fruit, Raisins, Yogurt, Cheese, Cheerios
Dinners:
- Monday: Band Practice and Dinner at the in-laws’
- Tuesday: Grilled Breaded Pork Chops with Grilled Veggies
- Wednesday: Bible Study night – out
- Thursday: Pasta Alfredo with Leftover Pork Chops and Grilled Veggies
- Friday: Rice and Beans
- Saturday: Cookout at Church
- Sunday: Leftover Night

Happy Menu Plan Monday, everyone! I had some leftover potatoes from last week’s menu and found bacon on manager’s special at the grocery store for $2.00. Of course, I made breakfast burritos, and now I have a great big bag of deliciousness in the freezer. Yum!
For the rest of the week…
Breakfasts:
- Me and Hubbo: Breakfast Burritos, Cereal, Pancakes
- Hosanna: Eggs, Veggie Sausage, Pancakes
Lunches:
- Me: Leftovers, PB&J, Salads, Turkey & Avocado Sandwiches
- Hubbo: Frozen meals
- Hosanna: Turkey, Peanut Butter, Leftovers
Snacks: Fruit, Raisins, Yogurt, Cheese
Dinners:
- Monday: Band Practice and Dinner at the in-laws’
- Tuesday: Out – Hubbo and I both have meetings across town
- Wednesday: Sandwiches (switching baby across town so I can go to Bible Study)
- Thursday: Grilled Breaded Pork Chops and Grilled Veggies
- Friday: Rice and Beans
- Saturday: Cookout at Church
- Sunday: Pasta Alfredo with leftover pork & veggies

Happy Independence Day, everyone! I am so blessed to have Hubbo home with me today for his first day off since we went out of town at the end of April. Kind of makes you want to just relax and not do anything all day. But it is Menu Plan Monday, so at least I will get that one thing done!
Breakfasts:
- Me: Eggs, Cereal, Pancakes
- Hubbo: Cereal, Pancakes
- Hosanna: Eggs, Veggie Sausage, Pancakes
Lunches:
- Me: PB&J, Hot Dogs, Chicken Salad with Mimi’s Famous Dressing, Leftovers
- Hubbo: Frozen meals
- Hosanna: Chicken/chicken salad, Peanut Butter, Hot Dogs, Leftovers
Snacks: Bananas, Kiwis, Strawberries, Yogurt, Cheerios, Goldfish
Dinners:
- Monday: Spaghetti (not very 4th of July-ish, but this is a leftover from last week’s menu)
- Tuesday: Golden Pork Chops in the crockpot
- Wednesday: Drive-Thru (meeting Hubbo across town to switch baby so I can head to Bible Study)
- Thursday: Veggie Stir Fry
- Friday: Sausage and Tomato Soup & Grilled Cheese
- Saturday: Cookout at Church
- Sunday: Picnic in the Park? Sandwiches and the like
Now, time to hit the grocery store!

I thought last week was going to be a tough week to menu plan because of having to make take-along recipes to VBS all week. Compared to this week, it was a cinch! Here we are at the end of the month again and my budget is tight, but this week is going to be a busy one so, again, I have had to be kind of creative and resourceful…
Thankfully, one thing that is making it a tiny bit easier is that my mother-in-law brought me a 5lb tub of potato salad leftover from last week’s family reunion. I already had some hot dogs in the fridge, so that will set me up for lunches a few times this week for sure. (Small issue: I am the only one in the house that will eat potato salad.)
Here goes nothin’!
Breakfasts:
- Me: Eggs, Cereal, Pancakes
- Hubbo: Cereal, Pancakes
- Hosanna: Eggs, Veggie Sausage, Pancakes
Lunches:
- Me: PB&J, Burritos, Hot Dogs
- Hubbo: Frozen meals
- Hosanna: Chicken, Peanut Butter, Hot Dogs
Snacks and Sides: Salads, fruit, yogurt, corn on the cob, potato salad
Dinners:
- Monday: Drive-thru (Hubbo and I both have meetings tonight, so it’s time to keep it simple)
- Tuesday: Chicken Sandwiches (Time to crock-pot a bunch of chicken to shred!)
- Wednesday: Handheld Beef & Bean Burritos from last week’s freezer batch (we’ll be out again, so this is a take-along meal)
- Thursday: Chicken Pot Pie
- Friday: Grilled Pesto Chicken & Roasted Bell Pepper Sandwiches (for company)
- Saturday: Cookout at Church
- Sunday: Spaghetti with Meat Sauce
Keeping it super-simple, but I am already exhausted just thinking about it. This reminds me of last week’s memory verse: “let us not lose heart… we will reap if we do not grow weary!”

Blog memes! I love them. I hope for your sake that you do, too. Here is my first contribution to Menu Plan Monday!
This week, Hubbo and I will be helping out with Vacation Bible School at our church all week long, so dinnertime is pretty much shot. I’m planning to make a lot of stuff that we can take with us and eat at room temperature. Because of that, my menu plan for this week is much more flexible and much less detailed than usual.
Breakfasts:
- For Hosanna – eggs, veggie sausage
- For Hubbo – cereal
- For me – cereal, eggs
Lunches:
- For Hosanna – chicken, peanut butter, rice and beans
- For Hubbo – frozen meals
- For me – rice and beans, grilled cheese, PB&J, salads
Snacks and Sides: raisins, strawberries, bananas, yogurt, baby carrots
Dinners: Sandwiches, Tortellini Pesto Salad, Bean and Cheese Burritos
To make all these things, my grocery list will be as follows:
- sandwich bread
- salad fixin’s
- tortellini
- broccoli
- bell pepper
- carrots
- tortillas
It’s going to be a crazy week – but hopefully the fun outweighs the crazy!
